It’s that time again! The most wonderful time of the year! We can’t turn on the tv or walk in to a store without being bombarded with ads for the latest flashy toys that promise to stimulate and educate our children. The truth of the matter is, that while the children will LOVE these toys when they receive them, they will end up bored with them before long. This is because it’s not the bells and whistles that they need to keep them stimulated. Using their imaginations can take them to many wonderful places and is a something that will stay with them for a lifetime. Pumpkin pie french toast
Now that autumn is in full swing many people are enjoying the fun harvest activities and flavors of the season. It’s a time to bring families together. Some of our favorite activities include picking apples and pumpkins and building a leaf man (aka scarecrow). The little ones love to jump in a newly raked pile of leafs. We also enjoy the flavors of fall. Mmmmm fresh apple pie right out of the oven with a scoop of ice cream or how about some pumpkin pie french toast? I came across a recipe for this last year and had to try it since my sons favorite pie is pumpkin. It did not disappoint us. We had such an overwhelming response for this recipe that we decided to share it with you all. I hope you enjoy!
Pumpkin Pie French Toast recipe
3 eggs (or egg whites) 2 Tbsp milk
1/8 tsp salt 1/4 tsp pumpkin pie spice
1/2 cup pumpkin 3 Tbsp sugar
1/4 tsp cinammon 6 slices firm bread
Mix all ingredients (except for the bread) until smooth. Pour in to a shallow dish. Dip each slice of bread in mixture. Grill on a hot skillet until golden brown on each side. Serve hot with syrup (add a spray of whipped cream for an extra treat ) Left over toast can be refrigerated or frozen for later use. You can all make the egg mixture the night before, refrigerate it and use it the next morning.
For me I use egg whites, sugar substitute and gluten free bread. I would love to hear your feedback.
